    Prepare the bitter melon: Cut off the ends, slice into 2-3 inch segments, and scoop out the seeds and pith. Blanch in boiling water with a pinch of salt for 1-2 minutes, then rinse in cold water to reduce bitterness. Gently squeeze out excess water.

    Make the filling: In a bowl, combine ground pork, minced shrimp, minced shallots, minced garlic, chopped green onions, fish sauce, salt, and black pepper. Mix well until thoroughly combined.

    Stuff the bitter melon: Carefully stuff the filling mixture into each bitter melon segment. Do not overstuff.

    Prepare the broth: In a pot, bring 1.5 liters of water to a boil. Add the stuffed bitter melon segments. Reduce heat to a simmer.
