- Garlic2 cloves
- Shallots1 small
- Vegetable oil1 tbsp
- Water1.5 liters
- Saltto taste
- Black pepperto taste
- Scallions2 stalks
- Cilantroa small bunch

Peel and deseed the chay squash, then cut into 2-inch cubes.

Mince garlic and shallots.

Heat vegetable oil in a pot over medium heat. Sauté minced garlic and shallots until fragrant.

Add vegetarian shrimp paste and stir-fry for 1 minute until aromatic.

Pour in water and bring to a boil.

Add the chay squash cubes to the boiling broth. Reduce heat and simmer for 15-20 minutes, or until the squash is tender but not mushy.
