- Water2.5 cups
- Vegetable oil1 tbsp
- Salt1 tsp
- Pork belly150g
- Shrimp200g
- Garlic2 cloves
- Fish sauce3 tbsp
- Sugar1 tsp
- Black pepper1/2 tsp
- Green onions3 stalks

Rinse jasmine rice until water is clear. Drain.

Combine rice, 2.5 cups water, 1 tbsp oil, and 1 tsp salt in a clay pot. Stir.

Cover and cook over medium-high heat until boiling, then reduce to low and simmer for 15-20 minutes until water is absorbed.

Slice pork belly thinly. Peel and devein shrimp. Mince garlic. Chop green onions.

In a pan, stir-fry pork belly until golden brown and slightly crispy. Remove. Add shrimp to the same pan with minced garlic, cook until pink. Season with 2 tbsp fish sauce, 1 tsp sugar, and 1/2 tsp black pepper.

Let the rice rest, covered, for 10 minutes after cooking. Gently fluff the rice, ensuring the bottom is slightly crisp.

Serve the rice from the clay pot, topped with the cooked pork belly and shrimp mixture. Garnish with chopped green onions and drizzle with remaining 1 tbsp fish sauce.
