- Beef sirloin or tenderloin500g
- Garlic3 cloves, minced
- Shallots1, finely chopped
- Red onion1, cut into wedges
- Green bell pepper1, cut into chunks
- Tomato1, cut into wedges
- Soy sauce3 tbsp
- Oyster sauce2 tbsp
- Sugar1 tsp
- Black pepper1/2 tsp
- Salt1/2 tsp
- Vegetable oil3 tbsp
- Water2 tbsp
- Cilantrofor garnish

Cut beef into 1-inch cubes. Marinate with 1 tbsp soy sauce, 1 tsp oyster sauce, minced garlic, and 1/4 tsp black pepper. Let sit for 15 minutes.

In a small bowl, whisk together remaining soy sauce, oyster sauce, sugar, salt, and water to make the sauce.

Heat 1.5 tbsp vegetable oil in a wok or large skillet over high heat until smoking. Add half the beef and stir-fry quickly until browned on all sides. Remove beef and set aside.

Add remaining oil to the wok. Add red onion and bell pepper, stir-fry for 1-2 minutes until slightly tender-crisp.

Add shallots and stir-fry for 30 seconds until fragrant.

Return the beef to the wok. Pour the prepared sauce over the beef and vegetables. Toss everything quickly to coat and heat through, about 1-2 minutes.

Add tomato wedges and toss gently for another 30 seconds.

Serve immediately, garnished with fresh cilantro.
