    Bring to a boil over medium-high heat. Cook without stirring until the syrup reaches the hard crack stage (150-155°C or 300-310°F). The syrup will take on a deeper amber hue from the spices.

    Remove cinnamon stick and star anise. Quickly dip each fruit skewer into the spiced sugar syrup, coating evenly.

    Place coated skewers on a parchment-lined baking sheet to cool and harden.
