- Rice noodles (Mì Quảng style)400g
- Shrimp150g
- Quail eggs12
- Turmeric powder1 tsp
- Annatto seeds (for color)1 tbsp
- Shallots2
- Garlic3 cloves
- Fish sauce3 tbsp
- Sugar1 tsp
- Chicken or pork broth1.5 liters
- Peanuts50g
- Fresh herbs (mint, cilantro, basil)1 bunch
- Lime1
- Chili1

Marinate pork ribs with fish sauce, sugar, minced shallots, garlic, turmeric, salt, and pepper for at least 30 minutes.

Sear the marinated pork ribs in a pot until lightly browned. Add water or broth to cover the ribs and simmer until tender (about 45-60 minutes).

Meanwhile, prepare the broth base: Sauté minced shallots and garlic. Add annatto seeds to infuse oil with color, then strain. Add this colored oil to the simmering ribs.

Add shrimp and quail eggs to the pot with the ribs and cook until done.

Add chicken or pork broth to the pot and bring to a gentle simmer. Adjust seasoning with fish sauce, salt, and pepper.

Prepare the noodles: Briefly rinse Mì Quảng noodles. Some prefer to blanch them quickly.

To serve, place a portion of noodles in a shallow bowl. Ladle the broth, ribs, shrimp, and quail eggs over the noodles. Garnish generously with roasted crushed peanuts, fresh herbs, sliced chili, and a lime wedge.
