- Turmeric powder1 tsp
- Annatto oil2 tbsp
- Shallots2

- Fish sauce3 tbsp
- Sugar1 tsp
- Chicken or pork broth1.2 liters
- Peanuts50g
- Fresh herbs (mint, cilantro)1 bunch
- Lime1
- Chili1

Cut pork ribs into smaller pieces. Marinate with fish sauce, sugar, minced shallots, garlic, turmeric, salt, and pepper.

Sear marinated ribs until browned. Add enough water or broth to cover and simmer until tender (about 30-40 minutes).

Add annatto oil to the pot. Add peeled and deveined shrimp and cook until pink (about 3-5 minutes).

Pour in the chicken or pork broth. Bring to a simmer and adjust seasoning with fish sauce, salt, and pepper.

Prepare Mì Quảng noodles by rinsing or briefly blanching.
