- Millet1 cup
- Water4 cups
- Coconut milk1 can (13.5 oz)
- Sugar1/2 cup
- Pandan leaves2-3
- Salt1/4 teaspoon
- Toasted sesame seeds1 tablespoon

Rinse the millet thoroughly under cold water until the water runs clear.

In a pot, combine the rinsed millet with 4 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 20-25 minutes, or until the millet is tender and has absorbed most of the water.

While the millet cooks, tie the pandan leaves into a knot. In a separate saucepan, combine the coconut milk, sugar, and salt. Add the knotted pandan leaves.

Heat the coconut milk mixture over medium-low heat, stirring until the sugar is dissolved. Do not boil. Simmer gently for about 5-10 minutes to infuse the pandan flavor.

Remove the pandan leaves from the coconut milk mixture.

Add the cooked millet to the coconut milk mixture. Stir well and simmer for another 5 minutes, allowing the flavors to meld.

Serve the Chè Hạt Kê warm or chilled, garnished with toasted sesame seeds.
