- Coconut Milk50ml

- Full-fat Coconut Cream200ml

- Toasted Coconut Flakes2 tbsp

Preheat oven to 180°C (350°F). Line a 10x15 inch baking pan with parchment paper.

Separate egg yolks and whites. In a large bowl, whisk egg yolks with half the sugar until pale and creamy.

Whisk in pandan extract, coconut milk, and vegetable oil into the egg yolk mixture.

Sift flour and baking powder. Gradually add dry ingredients to wet, mixing until just combined.

In a clean bowl, beat egg whites until foamy. Gradually add remaining sugar and beat to stiff peaks.

Gently fold one-third of egg whites into the yolk batter, then fold in the rest until smooth.

Pour batter into the pan and spread evenly. Bake for 15-20 minutes, until a toothpick comes out clean.

While cake bakes, whip coconut cream with powdered sugar until soft peaks form.

Immediately invert cake onto a towel dusted with powdered sugar. Peel off parchment paper. Let cool slightly.
