- Pork shoulder500g
- Thick rice noodles (bánh đa)400g
- Shallots200g
- Garlic5 cloves
- Fish sauce4 tbsp
- Sugar2 tbsp
- Vinegar (rice or white)3 tbsp
- Chili peppers2
- Fresh herbs (mint, cilantro, Thai basil)1 bunch
- Peanuts50g
- Vegetable oil100ml
- Saltto taste
- Black pepperto taste

Marinate thinly sliced pork shoulder with 2 tbsp fish sauce, 1 tbsp sugar, minced garlic, salt, and pepper. Let it sit for at least 30 minutes.

Prepare the broth: In a pot, combine 2 tbsp fish sauce, 1 tbsp sugar, 2 tbsp vinegar, finely chopped chili peppers, and 2 cups of water. Simmer gently for 10 minutes. Adjust seasoning to taste.

Thinly slice shallots and fry in vegetable oil until golden brown and crispy. Drain on paper towels. Reserve the shallot oil.

Grill the marinated pork until cooked through and slightly charred. Slice into bite-sized pieces.

Cook the thick rice noodles according to package directions until chewy. Drain and rinse briefly with cold water.

Assemble the bowls: Place a portion of noodles in each bowl. Top with grilled pork, a generous amount of crispy fried shallots, and fresh herbs. Drizzle with a little reserved shallot oil.

Ladle the warm broth over the noodles and pork. Garnish with chopped peanuts and additional fresh herbs.
