- Pork shoulder500g
- Garlic3 cloves
- Shallots1 large
- Lemongrass2 stalks
- Curry powder2 tbsp
- Coconut milk100ml
- Fish sauce2 tbsp
- Sugar1 tsp
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste
- Cilantrofor garnish
- Chili peppersfor garnish

Thinly slice the pork shoulder against the grain. Mince garlic and shallots. Bruise and finely chop the lemongrass.

In a bowl, marinate the pork with minced garlic, shallots, lemongrass, curry powder, fish sauce, sugar, salt, and pepper. Let it marinate for at least 15 minutes.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add the marinated pork and stir-fry until browned and almost cooked through.

Pour in the coconut milk and continue to stir-fry until the sauce thickens and coats the pork, about 3-5 minutes.

Adjust seasoning if needed. Garnish with fresh cilantro and sliced chili peppers before serving.
