- Fresh parsley1/4 cup, chopped

Preheat oven to 200°C (400°F). Wash potatoes thoroughly and prick them with a fork. Bake for 45-60 minutes, or until tender.

While potatoes bake, finely chop the onion, mushrooms, garlic, and parsley.

Heat butter or olive oil in a skillet over medium heat. Sauté the onion until softened, about 5 minutes.

Add the chopped mushrooms and garlic to the skillet. Cook until mushrooms release their liquid and it evaporates, about 8-10 minutes.

Stir in the chopped parsley, salt, and pepper. Cook for another minute.

Once potatoes are baked, let them cool slightly. Cut each potato in half lengthwise. Gently scoop out most of the flesh, leaving a border to form a shell. Mash the scooped-out potato flesh and mix it with the mushroom filling.

Spoon the mushroom and potato mixture back into the potato shells.

Place the stuffed potato halves back on a baking sheet. Bake for another 15-20 minutes, or until the filling is heated through and the tops are lightly golden.

Garnish with extra fresh parsley before serving.
