Prepare the dough: Whisk together flour and salt. Make a well in the center and add the egg and water. Mix until a shaggy dough forms, then knead on a floured surface for 5-7 minutes until smooth and elastic. Cover and let rest for 30 minutes.

Prepare the filling: Peel and dice the potatoes, then boil until tender. Mash the potatoes. In a separate skillet, cook the diced bacon until crispy. Remove bacon, leaving some rendered fat in the skillet. Add thinly sliced onions to the bacon fat and sauté until caramelized.

Combine filling: Mix the mashed potatoes with the caramelized onions and crispy bacon bits. Season with salt and pepper to taste.

Assemble the dumplings: Roll out the dough thinly on a floured surface. Cut out circles. Place a teaspoon of filling in the center of each circle. Fold the dough in half to create a crescent shape, pressing the edges firmly to seal.

Cook the dumplings: Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water. Cook for 5-7 minutes after they float to the surface.

Serve: Remove dumplings with a slotted spoon. Serve immediately, drizzled with melted butter and garnished with crispy fried onions.
