Classic Palak Paneer

  • Paneer250 g
  • Onion2 medium
  • Tomatoes3 medium
  • Ginger1 inch
  • Garlic4-5 cloves
  • Green chilies1-2
  • Ghee or Oil3 tbsp
  • Cumin seeds1 tsp
  • Turmeric powder1/2 tsp
  • Coriander powder1 tsp
  • Garam masala1/2 tsp
  • Red chili powder1/4 tsp (optional)
  • Cream2 tbsp (optional)
  • Kasoori methi (dried fenugreek leaves)1 tsp
  • Saltto taste
  • Wateras needed

    Wash spinach thoroughly. Blanch spinach in boiling water for 2-3 minutes, then immediately plunge into ice-cold water. Drain and puree to a smooth paste.

    Cut paneer into cubes. You can lightly pan-fry them until golden if desired, or use them as is.

    Finely chop onions. Puree tomatoes, ginger, garlic, and green chilies.

    Heat ghee or oil in a pan. Add cumin seeds and let them splutter.

    Add chopped onions and sauté until golden brown.

    Add the tomato-ginger-garlic-chili paste and cook until oil separates from the masala.

    Add turmeric powder, coriander powder, red chili powder (if using), and salt. Sauté for a minute.

    Add the spinach puree and mix well. Cook for 5-7 minutes, stirring occasionally.

    Add water if the gravy is too thick. Bring to a simmer.

    Add paneer cubes and garam masala. Gently mix.

    Crush kasoori methi between your palms and add it to the curry. Simmer for another 2-3 minutes.

    Stir in cream (if using) just before serving. Adjust salt if needed.
