
Traditional Mushroom Soup (Chorba ot Manatarki)

- Fresh porcini mushrooms (manatarki)500g
- Onion1 medium
- Carrot1 medium
- Butter50g
- All-purpose flour2 tablespoons
- Water1.5 liters
- Milk200ml
- Sour cream (or yogurt)100g
- Fresh dill1 bunch
- Saltto taste
- Black pepperto taste

Clean and slice the porcini mushrooms. Finely chop the onion and carrot.

In a large pot, melt the butter over medium heat. Sauté the chopped onion and carrot until softened, about 5-7 minutes.

Add the sliced mushrooms to the pot and cook until they release their liquid and start to brown, about 10-15 minutes.

Sprinkle the flour over the vegetables and mushrooms, stirring constantly for 1 minute to cook the flour.

Gradually whisk in the water, ensuring no lumps form. Bring the soup to a simmer.

Reduce heat and let the soup simmer gently for 20 minutes, allowing the flavors to meld.

Stir in the milk and heat through, but do not boil.

In a small bowl, whisk the sour cream with a ladleful of hot soup to temper it, then stir it back into the pot.

Season generously with salt and black pepper to taste.

Chop the fresh dill. Serve the soup hot, garnished with fresh dill and an extra dollop of sour cream if desired.
