A classic Bulgarian elderflower syrup, made by steeping fresh elderflower blossoms in a sugar and citric acid solution. It's a fragrant and refreshing cordial perfect for diluting with water or sparkling water.

- Elderflower blossoms30-40 heads
- Granulated sugar2 kg
- Water2 liters
- Citric acid50 g
- Lemons2-3, sliced

Gently shake the elderflower blossoms to remove any insects. Do not wash them, as this removes pollen which adds flavor.

In a large non-reactive container, combine the sugar and water. Stir until the sugar is completely dissolved.

Add the citric acid and sliced lemons to the sugar water. Stir well.

Submerge the elderflower blossoms into the sugar-lemon mixture. Ensure they are fully covered.

Cover the container with a clean cloth or cheesecloth and let it steep at room temperature for 24-48 hours. Stir occasionally.

Strain the syrup through a fine-mesh sieve lined with cheesecloth into clean bottles. Discard the blossoms and lemon slices.

Seal the bottles tightly. Store in a cool, dark place. The syrup will last for several months.
