A classic Balkan sweet preserve made from unripe green figs, sugar, and lemon, cooked to a thick, syrupy consistency. Perfect for spreading on toast or serving with cheese.

Съставки
- Unripe green figs1 kg
- Granulated sugar750 g
- Water250 ml
- Lemon1
- Vanilla bean (optional)1/2

Wash the green figs and prick them all over with a fork or skewer.

Place the figs in a large bowl and cover with cold water. Let them soak for 2-3 hours, changing the water a few times. This helps to remove bitterness.

Drain the figs and place them in a large, heavy-bottomed pot. Add the sugar and water.

Bring the mixture to a boil over medium-high heat, stirring until the sugar dissolves. Reduce heat to low and simmer gently for about 60-75 minutes, or until the figs are tender and the syrup has thickened. Skim off any foam that rises to the surface.

Cut the lemon in half and squeeze the juice into the pot. If using, add the vanilla bean seeds scraped from the pod. Stir gently.

Continue to simmer for another 10-15 minutes until the syrup reaches a jam-like consistency. Test by dropping a little syrup onto a cold plate; it should set slightly.

Remove from heat. Let the jam cool slightly in the pot before carefully ladling it into sterilized jars. Seal the jars tightly.
