
Classic White Cherry 'Slatko' (Sweet Preserve)

A traditional Bulgarian sweet preserve made from whole white cherries, cooked with sugar to create a thick, syrupy jam. Perfect for spreading on toast or serving with yogurt.

- White cherries1 kg
- Granulated sugar700 g
- Water100 ml
- Lemon juice1 tbsp

Wash the white cherries thoroughly and remove the stems. If desired, you can pit them, but traditionally they are left whole.

In a large, heavy-bottomed pot, combine the cherries, sugar, and water.

Let the mixture sit for 2-3 hours, or preferably overnight, to allow the cherries to release their juices and the sugar to dissolve.

Place the pot over medium heat and bring to a gentle boil, stirring occasionally to prevent sticking.

Once boiling, reduce the heat to low and simmer for about 60-75 minutes, or until the syrup thickens and reaches the desired consistency. Skim off any foam that rises to the surface.

Stir in the lemon juice during the last 5 minutes of cooking.

Carefully ladle the hot 'slatko' into sterilized glass jars. Seal tightly.

Allow the jars to cool completely before storing in a cool, dark place.
