A traditional Bulgarian fruit leather, Gabrovski Pestil is made from pureed fruits, often plums or apricots, slowly dried into a chewy, sweet-tart confection. This classic version focuses on the natural flavors of the fruit.

- Ripe Plums2 kg
- Sugar (optional, to taste)100-200g
- Water100 ml
- Salt1 pinch

Wash the plums, remove pits, and place them in a large pot with water. Cook over medium heat until very soft.

Puree the cooked plums using an immersion blender or food processor until smooth. If using, stir in sugar until dissolved.

Strain the puree through a fine-mesh sieve to remove any remaining skins or solids, if desired for a smoother texture.

Pour the puree onto a baking sheet lined with parchment paper, spreading it into a thin, even layer (about 0.5 cm thick).

Dry the pestil in a low oven (around 60-70°C or 140-160°F) with the door slightly ajar, or in a dehydrator, for 12-24 hours, or until it is no longer sticky to the touch and can be peeled off the parchment.

Once dried, cut the pestil into desired shapes (squares or strips).

Store in an airtight container at room temperature.
