- Tomatoes2 large
- Onion1 medium
- Garlic2 cloves
- Vegetable oil2 tablespoons
- Water or vegetable broth4 cups
- Saltto taste
- Black pepperto taste
- Fresh mint2 tablespoons, chopped
- Yogurt or sour creamfor garnish

Roast the red bell peppers and tomatoes until the skins are charred. Place peppers in a bowl, cover with plastic wrap, and let steam for 10-15 minutes. Peel the peppers and tomatoes, remove seeds and stems.

Finely chop the onion and sauté in vegetable oil until softened. Add minced garlic and cook for another minute.

Combine the roasted peppers, tomatoes, sautéed onion and garlic in a blender. Blend until smooth.

Transfer the blended mixture to a pot. Add water or vegetable broth, salt, and pepper. Bring to a simmer and cook for 15-20 minutes.

Stir in the chopped fresh mint just before serving.

Serve hot, garnished with a dollop of yogurt or sour cream.
