- Chicken broth150 ml
- Heavy cream50 ml

Preheat oven to 190°C (375°F). Score the fat cap of the pork loin if present. Season generously with salt and pepper.

Heat butter in an oven-safe skillet over medium-high heat. Sear the pork loin on all sides until golden brown.

Remove pork from skillet and set aside. Add sliced apples and chopped shallots to the skillet. Sauté for 5 minutes until slightly softened.

Deglaze the pan with Calvados, scraping up any browned bits. Let it reduce by half.

Add chicken broth and herb sprigs. Return the pork loin to the skillet, placing it on top of the apples and shallots.

Transfer the skillet to the preheated oven. Roast for 45-60 minutes, or until the internal temperature reaches 65°C (150°F).

Remove pork from the skillet and let it rest for 10-15 minutes, tented with foil.

While pork rests, place the skillet back on the stovetop over medium heat. Remove herb sprigs. Stir in heavy cream and simmer until the sauce thickens slightly.
