
Classic Bob s Bamia (Okra and Bean Stew)

A hearty and traditional Bulgarian stew featuring tender white beans and okra simmered in a rich tomato-based sauce with aromatic vegetables.

- Fresh okra300g
- Onions2 medium
- Carrots1 large
- Tomatoes400g can, crushed
- Tomato paste2 tbsp
- Garlic3 cloves
- Fresh parsley1/2 bunch
- Vegetable oil4 tbsp
- Saltto taste
- Black pepperto taste

Soak the white beans overnight in plenty of water. Drain and rinse.

Boil the soaked beans in fresh water until tender, about 60-90 minutes. Drain, reserving some cooking liquid.

While beans are cooking, prepare the vegetables. Chop onions and carrots. Mince garlic. Trim the tops and bottoms of the okra pods and cut into 2-3 cm pieces.

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Sauté the chopped onions and carrots until softened, about 8-10 minutes.

Add the minced garlic and cook for another minute until fragrant.

Stir in the crushed tomatoes, tomato paste, and cook for 2-3 minutes.

Add the cooked beans and the prepared okra to the pot. Stir to combine.

Add enough reserved bean cooking liquid or water to cover the ingredients and create a stew consistency. Bring to a simmer.

Season with salt and black pepper to taste. Cover and simmer gently for at least 30-45 minutes, or until the okra is tender and the flavors have melded. Stir occasionally, adding more liquid if it becomes too thick.

Chop the fresh parsley. Stir most of the parsley into the stew just before serving. Garnish with the remaining parsley.
