Cut the pork and beef into 2-3 cm cubes. Season with salt and pepper.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the meat in batches, then set aside.

Chop the onions and bell peppers. Mince the garlic.

Add onions and peppers to the pot and sauté until softened, about 5-7 minutes.

Stir in the minced garlic and tomato paste, cook for 1 minute until fragrant.

Add the chopped tomatoes, sweet paprika, hot paprika (if using), and bay leaf. Stir well.

Return the browned meat to the pot. Add enough water to just cover the meat.

Bring to a simmer, then reduce heat to low, cover, and cook for at least 2-3 hours, or until the meat is very tender. Add more water if needed to maintain a stew consistency.

Season with salt and pepper to taste. Remove the bay leaf before serving.
