- Leeks4 large
- Onion1 medium
- Carrot1 medium
- Tomato paste2 tbsp
- Red wine100ml
- Vegetable oil3 tbsp
- Paprika1 tsp
- Black pepperto taste

Cut the pork shoulder into 2-3 cm cubes. Season generously with salt and black pepper.

Clean the leeks thoroughly and slice them into 1 cm thick rounds. Chop the onion and dice the carrot.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the pork cubes on all sides. Remove pork and set aside.

Add the chopped onion and diced carrot to the pot and sauté until softened, about 5-7 minutes.

Stir in the tomato paste and paprika, cook for 1 minute until fragrant.

Return the pork to the pot. Add the sliced leeks and red wine. Stir to combine.

Add enough water to almost cover the ingredients. Bring to a simmer, then reduce heat to low, cover, and cook for 1.5 to 2 hours, or until the pork is very tender.

Season with additional salt and pepper to taste. If the sauce is too thin, simmer uncovered for the last 15-20 minutes to thicken.
