- Bacon slices150 g
- Prunes (pitted)150 g
- Onion1 medium
- Garlic2 cloves
- Fresh rosemary1 sprig
- Dijon mustard2 tbsp
- Olive oil2 tbsp
- Saltto taste
- Black pepperto taste

Butterfly the pork loin. Season with salt and pepper. Spread Dijon mustard evenly over the inside surface.

Chop the bacon into small pieces and cook until crispy. Drain excess fat. Finely chop the onion and garlic. Sauté onion and garlic in olive oil until softened. Add chopped bacon, whole prunes, and chopped rosemary. Mix well.

Spread the prune and bacon filling over the pork loin. Roll up tightly and secure with kitchen twine.

Sear the pork roll on all sides in a hot skillet with olive oil until golden brown.

Transfer to a baking dish. Roast in a preheated oven at 180°C (350°F) for 70-90 minutes, or until the internal temperature reaches 70°C (160°F).
