- Lamb shoulder1 kg
- Red onions2 medium
- Cherry tomatoes200 g
- Garlic3 cloves
- Olive oil80 ml
- Lemon juice40 ml
- Harissa paste2 tbsp
- Smoked paprika1 tsp
- Cumin1 tsp
- Saltto taste
- Black pepperto taste
- Pomegranate molasses60 ml
- Fresh mintfor garnish

Cut the lamb into 3-4 cm cubes. Finely mince 2 garlic cloves. Chop 1 red onion.

In a bowl, combine the lamb with minced garlic, chopped onion, olive oil, lemon juice, harissa paste, smoked paprika, cumin, salt, and pepper. Mix well.

Cover and marinate in the refrigerator for at least 2 hours, or up to 6 hours.

Cut the remaining red onion into large wedges. Leave cherry tomatoes whole. Mince the remaining garlic clove.

Thread the marinated lamb, red onion wedges, and cherry tomatoes alternately onto metal skewers.

Preheat your grill or grill pan to medium-high heat.

Grill the kebabs for about 10-15 minutes, turning occasionally. During the last 5 minutes of grilling, brush generously with pomegranate molasses.

Ensure the lamb is cooked to your desired doneness and the glaze is slightly caramelized.
