A traditional Macedonian dish featuring marinated pork or lamb, grilled to perfection, often served with a side of ajvar and fresh bread. This version emphasizes classic preparation with simple, high-quality ingredients.

- Pork shoulder or lamb leg1 kg
- Onions2 large
- Garlic4 cloves
- Red wine200 ml
- Olive oil100 ml
- Paprika (sweet)2 tbsp
- Saltto taste
- Black pepperto taste

Cut the meat into 2-3 cm cubes.

Slice the onions thinly and mince the garlic.

In a large bowl, combine the meat, onions, garlic, red wine, olive oil, and paprika. Season with salt and pepper. Mix well.

Cover the bowl and marinate in the refrigerator for at least 2 hours, or preferably overnight.

Soak wooden skewers in water for at least 30 minutes to prevent burning.

Thread the marinated meat onto the skewers, ensuring pieces are not too crowded.

Preheat a grill or grill pan to medium-high heat.

Grill the kebaps for 10-15 minutes, turning occasionally, until cooked through and nicely charred.

Serve hot, traditionally with ajvar and bread.
