- Beef (top round or similar lean cut)1 kg
- Coarse sea salt75 g
- Pastirma spice mix (pre-made or blend of fenugreek, paprika, garlic powder, cumin)50 g
- Water75 ml
- Black pepper (freshly ground)5 g

Cut the beef into thin, flat strips (about 1 cm thick).

Rub the beef strips generously with coarse sea salt. Place in a container, cover, and refrigerate for 2 days, turning once.

Rinse the beef strips and pat them very dry with paper towels.

Mix the pastirma spice mix, black pepper, and water to create a paste. Adjust water for desired consistency.

Coat the beef strips thoroughly with the spice paste.

Lay the coated strips on a wire rack set over a baking sheet. Refrigerate for another 3-5 days, turning daily, until the paste is dry and the meat is firm.

Slice thinly and serve.
