Tender, marinated lamb or beef skewers grilled to perfection over charcoal, a quintessential dish for celebrations and gatherings.

- Lamb shoulder or beef chuck1.5 kg
- Yellow onions3 large
- Garlic5 cloves
- Coriander seeds1 tbsp
- Cumin seeds1 tbsp
- Paprika1 tbsp
- Vegetable oil1/4 cup
- Lemon juice2 tbsp
- Saltto taste
- Black pepperto taste
- Fresh cilantrofor garnish
- Red onionfor garnish

Cut the lamb or beef into 1.5-inch cubes. Peel and slice the onions thinly. Mince the garlic.

In a large bowl, combine the meat, sliced onions, minced garlic, coriander seeds, cumin seeds, paprika, vegetable oil, and lemon juice. Season generously with salt and black pepper. Mix well to ensure all meat is coated.

Cover the bowl and marinate in the refrigerator for at least 4 hours, or preferably overnight.

Thread the marinated meat onto skewers, alternating with pieces of onion if desired. Discard the marinade.

Preheat your grill to medium-high heat. If using charcoal, wait until the coals are covered in white ash.

Grill the skewers for 10-15 minutes, turning occasionally, until the meat is cooked through and has a nice char.

Remove from grill, let rest for a few minutes. Garnish with fresh cilantro and thinly sliced red onion before serving.
