
Traditional Shopska Gyuveche with Sausage

A classic Bulgarian baked dish featuring layers of fresh vegetables, sirene cheese, and hearty sausage, baked in individual clay pots (gyuveche).

Preheat oven to 200°C (400°F).

Slice the Bulgarian sausage into rounds.

Chop the tomatoes, bell peppers, and onions into medium-sized pieces.

Crumble the sirene cheese.

In each individual clay pot (gyuveche), layer the chopped vegetables and sausage slices.

Distribute the crumbled sirene cheese over the layers.

In a small bowl, whisk the eggs with a pinch of salt and pepper. Pour this mixture evenly over the contents of each gyuveche.

Dot the top of each gyuveche with small pieces of butter.

Place the gyuveche pots on a baking tray and bake in the preheated oven for 30-40 minutes, or until the vegetables are tender and the top is golden brown and bubbly.

Garnish with fresh chopped parsley before serving.
