- Rabbit1 kg, cut into pieces
- Rice200 g, medium grain
- Onion1 large, chopped
- Carrots2 medium, diced
- Garlic3 cloves, minced
- Tomato paste2 tbsp
- Vegetable broth700 ml
- Olive oil3 tbsp
- Bay leaf1
- Dried savory1 tsp
- Saltto taste
- Black pepperto taste
- Fresh parsleyfor garnish

Season rabbit pieces with salt and pepper.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the rabbit pieces on all sides. Remove and set aside.

Add chopped onion and diced carrots to the pot. Sauté until softened, about 5-7 minutes.

Add minced garlic and tomato paste, cook for another minute until fragrant.

Return the rabbit pieces to the pot. Add rice, bay leaf, and dried savory.

Pour in the vegetable broth and water (if needed to cover). Bring to a boil.

Reduce heat to low, cover, and simmer for 45-60 minutes, or until the rabbit is tender and the rice is cooked through. Stir occasionally.

Adjust seasoning with salt and pepper. Remove bay leaf.

Let it rest for 5-10 minutes before serving. Garnish with fresh parsley.
