- Dried apricots50 g

Preheat oven to 190°C (375°F).

Clean and scale the carp. Score the sides.

Chop the walnuts and dried apricots. Finely chop the onion and parsley.

In a bowl, combine chopped walnuts, dried apricots, onion, breadcrumbs, half of the parsley, melted butter, salt, and pepper. Mix well.

Stuff the carp cavity with half of the walnut mixture.

Place the carp in a baking dish. Spread the remaining walnut mixture over the top of the fish, pressing gently.

Bake for 45-55 minutes, or until the fish is cooked through and the topping is golden brown.

Garnish with fresh parsley before serving.
