- Cherry Tomatoes1 cup, halved
- Kalamata Olives1/4 cup, pitted
- Capers2 tbsp
- Garlic2 cloves, sliced
- Fresh Oregano2 sprigs
- Olive Oil3 tbsp

Preheat oven to 200°C (400°F).

Rinse the trout and pat dry.

Season the inside and outside of the trout with salt and pepper.

In a small bowl, combine halved cherry tomatoes, pitted Kalamata olives, capers, sliced garlic, and olive oil.

Stuff the cavity of each trout with some of the Mediterranean mixture and a sprig of fresh oregano.

Place each trout on a large piece of aluminum foil.

Add any remaining Mediterranean mixture around the fish inside the foil.

Wrap the foil tightly around each trout to create a sealed packet.

Place the foil packets on a baking sheet.

Bake for 20-25 minutes, or until the fish is cooked through.
