A classic Bulgarian sweet pie made with grated pumpkin, walnuts, and cinnamon, baked until golden and often dusted with powdered sugar. It's a comforting and aromatic dessert perfect for autumn.

- Walnuts200 g
- Sugar150 g
- Cinnamon1 tsp
- Vegetable oil100 ml
- Filo dough sheets1 pack
- Powdered sugarfor dusting
- Salt1/2 tsp

Peel and grate the pumpkin. Squeeze out excess moisture.

Finely chop the walnuts.

In a bowl, mix grated pumpkin, chopped walnuts, sugar, cinnamon, and half of the vegetable oil.

Preheat oven to 180°C (350°F).

Lay out one sheet of filo dough, brush with oil. Place another sheet on top and brush with oil. Spread a portion of the pumpkin filling over the dough.

Roll up the dough tightly to form a log. Repeat with remaining filo dough and filling.

Arrange the rolls in a spiral or any desired shape in a greased baking dish.

Brush the top of the rolls with the remaining vegetable oil.

Bake for 40-50 minutes, or until golden brown and crispy.

Let cool slightly, then dust generously with powdered sugar before serving.
