  • Cherry tomatoes250 g
  • Kalamata olives100 g
  • Capers2 tbsp
  • Garlic3 cloves
  • Olive oil75 ml
  • Dry white wine50 ml
  • Fresh oregano1 tbsp, chopped
  • Saltto taste
  • Black pepperto taste

    Preheat oven to 190°C (375°F).

    Clean the turbot and make shallow scores on the skin.

    Halve the cherry tomatoes. Pit the olives if necessary.

    In a baking dish, combine cherry tomatoes, olives, capers, minced garlic, chopped oregano, olive oil, white wine, salt, and pepper. Toss to combine.

    Place the turbot on top of the tomato and olive mixture. Season the fish with salt and pepper.

    Bake for 35-40 minutes, or until the fish is cooked through and the tomatoes have softened and released their juices.

    Let it rest for a few minutes before serving.
