- Kalamata Olives1/2 cup, pitted
- Capers2 tbsp
- Fresh Oregano2 tbsp, chopped
- Lemon1
- Olive Oil5 tbsp
- Saltto taste
- Black Pepperto taste

Clean and score the sea bream.

In a bowl, combine pitted Kalamata olives, capers, chopped fresh oregano, lemon juice, and 3 tbsp of olive oil. Season with salt and pepper.

Rub the fish inside and out with the remaining 2 tbsp of olive oil, salt, and pepper.

Stuff the cavities of the fish with half of the olive and caper mixture.

Grill the fish over medium-high heat for about 6-8 minutes per side, until cooked through.

Remove from grill, spoon the remaining olive and caper mixture over the fish. Drizzle with a little extra olive oil and serve immediately.
