- Arborio rice200 g
- Onion1 large
- Garlic3 cloves
- Tomatoes400 g
- White wine100 ml
- Vegetable broth500 ml
- Olive oil3 tbsp
- Fresh parsley1 bunch

Clean the mussels thoroughly, removing any beards.

Finely chop the onion and garlic.

Dice the tomatoes.

Heat olive oil in a large pot or deep skillet over medium heat. Sauté the chopped onion until softened, about 5-7 minutes.

Add the minced garlic and cook for another minute until fragrant.

Stir in the rice and toast for 1-2 minutes.

Pour in the white wine and let it evaporate, scraping any browned bits from the bottom of the pot.

Add the diced tomatoes and vegetable broth. Season with salt and pepper.

Bring the mixture to a simmer, then add the cleaned mussels.

Cover the pot and cook for 10-15 minutes, or until the mussels have opened. Discard any mussels that remain closed.

Stir in most of the chopped fresh parsley.

Serve hot, garnished with the remaining parsley.
