- Fresh mussels2 pounds
- Olive oil2 tablespoons
- Garlic4 cloves, minced
- Crushed tomatoes1 (28 ounce) can
- Dry white wine1/2 cup
- Fresh parsley, chopped1/4 cup
- Red pepper flakes1/4 teaspoon (optional)

Rinse the mussels under cold water and scrub them clean. Discard any mussels that are open and do not close when tapped.

Heat olive oil in a large pot or Dutch oven over medium heat. Add minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute.

Pour in the crushed tomatoes and white wine. Bring to a simmer.

Add the cleaned mussels to the pot. Cover and cook for 5-7 minutes, or until the mussels have opened. Stir occasionally.

Discard any mussels that did not open. Stir in the chopped fresh parsley. Season with salt and black pepper to taste.
