- Olive oil2 tablespoons
- Garlic5 cloves, thinly sliced
- Calabrian chili paste or chopped chilies1-2 tablespoons (to taste)
- San Marzano tomatoes, crushed1 (28 ounce) can
- Dry white wine1/2 cup
- Fresh basil leaves, torn1/4 cup
- Saltto taste

Clean the mussels, scrubbing them and removing beards. Discard any mussels that are open and do not close when tapped.

Heat olive oil in a large pot over medium heat. Add sliced garlic and Calabrian chili paste/chilies. Cook for 1-2 minutes until fragrant, being careful not to burn the garlic.

Add the crushed San Marzano tomatoes and white wine. Stir well and bring to a gentle simmer.

Add the cleaned mussels to the pot. Cover and cook for 5-8 minutes, until the mussels have opened. Stir once or twice.

Remove any unopened mussels. Stir in the torn fresh basil leaves. Season with salt and black pepper to taste.

Serve immediately, ensuring each serving gets plenty of the spicy sauce.
