While meringues are baking/cooling, prepare the cream: In a bowl, whisk together plain yogurt, powdered sugar, vanilla extract, and rosewater until smooth. Adjust rosewater to taste.

Immediately sprinkle the coated snowballs generously with chopped pistachios.
