- Tomatoes500 g
- Eggplant250 g
- Garlic3 cloves
- Sunflower oil100 ml

Roast the red bell peppers and eggplant until tender and slightly charred. Peel the peppers and eggplant.

Boil the tomatoes for a few minutes, then peel and chop them.

Finely chop or process the roasted peppers, eggplant, and tomatoes.

Mince the garlic.

Combine all processed vegetables, minced garlic, sunflower oil, salt, and pepper in a pot.

Simmer the mixture over low heat for about 1-1.5 hours, stirring occasionally, until thickened.

Let it cool. Serve garnished with parsley if desired.
