Prepare pita chips: Toss pita triangles with 1 tbsp olive oil, salt, and pepper. Bake at 375°F (190°C) for 8-10 minutes until crisp.

Make the vinaigrette: Whisk together 3 tbsp olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
