A faster, fresher take on sauerkraut, this salad uses pre-made sauerkraut and is mixed with fresh vegetables and a simple dressing for a quick side dish.

- Sauerkraut (store-bought or homemade)500 g
- Carrot1 medium
- Onion1/2 medium
- Fresh Dill1/4 cup, chopped
- Sunflower Oil2 tbsp
- Saltto taste
- Black Pepperto taste

Drain the sauerkraut well, squeezing out excess liquid. If very sour, rinse briefly under cold water.

Peel and finely dice the carrot and onion.

Chop the fresh dill.

In a bowl, combine the drained sauerkraut, diced carrot, diced onion, and chopped dill.

Drizzle with sunflower oil and season with salt and black pepper to taste. Mix well.
