
Traditional Tutmanik

A classic Bulgarian banitsa-like pastry, Tutmanik is made with layers of thin dough filled with a mixture of sirene cheese, eggs, and yogurt, then baked until golden and flaky.

- water200ml
- vegetable oil100ml
- salt1 tsp
- sirene cheese (Bulgarian white brine cheese)400g
- eggs3 large
- plain yogurt150g
- butter, melted50g

For the dough: Mix flour, water, 50ml oil, and salt. Knead until smooth and elastic. Cover and let rest for 30 minutes.

For the filling: Crumble the sirene cheese. Whisk eggs and yogurt together, then mix with the cheese.

Divide the dough into 8-10 equal portions. Roll each portion very thinly into a large circle.

Lightly grease a baking dish with oil. Place one thin dough sheet, brush with melted butter, and sprinkle with some filling. Repeat with remaining dough sheets and filling, ending with a dough sheet.

Brush the top layer with melted butter. Score the top into squares or diamonds.

Bake in a preheated oven at 200°C (400°F) for 30-40 minutes, or until golden brown and puffed.
