- Canned white beans, drained and rinsed2 cans (approx. 800g total)
- Onion1 medium
- Carrots1 medium
- Bell pepper (red or green)1/2 large
- Garlic2 cloves
- Tomato paste1 tbsp
- Mint (dried)1/2 tsp
- Savory (dried)1/2 tsp
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste
- Water or vegetable broth1 cup

Finely chop the onion, carrot, and bell pepper. Mince the garlic.

Heat vegetable oil in a pot over medium heat. Sauté the onion until softened, about 5 minutes.

Add the carrot and bell pepper, cook for another 5 minutes.

Stir in the minced garlic and tomato paste, cook for 1 minute.

Add the drained and rinsed canned beans to the pot. Stir in dried mint and savory.

Pour in water or vegetable broth. Bring to a simmer.

Season with salt and black pepper. Simmer for at least 20-30 minutes, allowing flavors to meld. Adjust seasoning.
