- Smoked pork (e.g., smoked bacon or ham hock)200g
- Onion2 medium
- Carrots2 medium
- Bell pepper (red or green)1 large
- Garlic3 cloves
- Tomato paste1 tbsp
- Mint (dried)1 tsp
- Savory (dried)1 tsp
- Paprika1 tsp
- Vegetable oil or Lard2 tbsp
- Wateras needed

Soak the dried beans overnight. Drain and rinse.

Place the soaked beans in a pot with fresh water and the smoked pork. Bring to a boil, then simmer for 1.5-2 hours, or until beans and pork are tender. Remove pork, shred or dice, and set aside. Drain beans, reserving some cooking liquid.

Chop the onion, carrots, and bell pepper. Mince the garlic.

Heat oil or lard in a skillet over medium heat. Sauté onion until softened (5-7 minutes). Add carrots and bell pepper, cook for another 5-7 minutes.

Add minced garlic and cook for 1 minute. Stir in tomato paste, mint, savory, and paprika. Cook for 1-2 minutes.

In a clay pot or Dutch oven, combine the cooked beans, sautéed vegetables, and the cooked smoked pork.

Add enough reserved bean liquid or fresh water to cover. Season with salt and pepper (be mindful of salt from smoked pork).

Cover and bake at 180°C (350°F) for 1-1.5 hours, or simmer on the stovetop until flavors meld and stew thickens.
