- Yellow onion1 large
- Vegetable broth4 cups
- Olive oil3 tbsp
- Garlic2 cloves
- Fresh parsley1/4 cup, chopped

Clean and slice the mushrooms. Finely chop the onion and mince the garlic.

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.

Add the minced garlic and sliced mushrooms to the pot. Cook until the mushrooms release their liquid and start to brown, about 8-10 minutes.

Stir in the Arborio rice and toast for 1-2 minutes until the edges of the grains become translucent.

Pour in the vegetable broth. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the rice is tender and most of the liquid is absorbed. Stir occasionally.

Season with salt and black pepper to taste. Stir in chopped fresh parsley.
