- Red bell peppers8 large
- Tomatoes800g, crushed or pureed
- Onion1 large, finely chopped
- Garlic3-4 cloves, minced
- Olive oil4 tbsp
- Parsley1/2 cup, chopped
- Saltto taste
- Black pepperto taste
- Water1/2 cup, if needed

Roast the bell peppers over an open flame or under a broiler until the skin is blackened and blistered. Place them in a bowl, cover with plastic wrap, and let steam for 15-20 minutes. Peel the skin off the peppers and remove the seeds and stems.

While peppers are steaming, heat olive oil in a large pan over medium heat. Sauté the chopped onion until softened and translucent, about 5-7 minutes.

Add the minced garlic and cook for another minute until fragrant.

Stir in the crushed tomatoes, salt, and pepper. Bring to a simmer and cook for 10-15 minutes, allowing the sauce to thicken slightly.

Gently place the peeled peppers into the tomato sauce. If the sauce is too thick, add a little water. Cover and simmer for another 15-20 minutes, allowing the peppers to absorb the flavors.

Stir in most of the chopped parsley. Taste and adjust seasoning if necessary.

Serve hot, garnished with the remaining fresh parsley.
