- Red bell peppers8 large
- Tomatoes800g, crushed or pureed
- Onion1 large, finely chopped
- Garlic3 cloves, minced
- Olive oil4 tbsp
- Sirene cheese (Bulgarian feta-style)200g, crumbled
- Parsley1/2 cup, chopped
- Saltto taste
- Black pepperto taste
- Water1/2 cup, if needed

Roast the bell peppers until blackened and blistered. Steam, peel, and deseed them as in the classic recipe.

Sauté onion in olive oil until softened. Add garlic and cook for 1 minute.

Stir in crushed tomatoes, salt, and pepper. Simmer for 10 minutes.

Gently place the peeled peppers into the sauce. Simmer covered for 15 minutes.

Transfer the peppers and sauce to a baking dish. Sprinkle the crumbled sirene cheese evenly over the top.

Bake in a preheated oven at 180°C (350°F) for 15-20 minutes, or until the cheese is slightly melted and golden.
