- Tomatoes400g, crushed
- Onion1 small, chopped
- Garlic2 cloves, minced
- Red bell pepper1, roasted and sliced
- Feta cheese100g, crumbled
- Olive oil3 tbsp
- Fresh oregano1 tbsp, chopped

Preheat oven to 200°C (400°F). Slice eggplants and optionally salt them as in the classic recipe. Brush eggplant slices lightly with olive oil and bake for 15-20 minutes until slightly tender.

While eggplant bakes, heat remaining olive oil in a pan. Sauté onion until soft, then add garlic and cook for 1 minute.

Add crushed tomatoes, salt, and pepper. Simmer for 10 minutes.

In an oven-safe dish, layer the partially baked eggplant slices. Spoon the tomato sauce over them. Top with roasted red bell pepper slices and crumbled feta cheese.

Bake for another 15-20 minutes, or until the sauce is bubbly and the feta is lightly golden.

Garnish with fresh oregano before serving.
